My favourite part was the stable fluids bit where he added forces by dragging his fingers around, and the planarity game part.
Although I'm not convinced I could throw away my keyboard just yet. I like the tactile sensation of pushing down on keys. Even laptop keyboards still irritate me, so I can only imagine how distressing a completely flat keyboard would be.
The bit where he draws some shapes and stretches and twists them a bit reminds me of this SIGGRAPH paper from last year.

I would not be surprised to see this technology becoming quite common over the next 36 months or so. I would love to be able to give it a try.

It looks a lot like the computers from Minority Report in some ways.
